I, a gluten-eater, have a new favorite chocolate cake. We wanted a quick dessert, so we baked up a quick King Arthur Gluten Free Chocolate Cake.
We followed the low-fat instructions on the box since we’re at a high altitude, and we were blown away. The cake was moist and fluffy. I genuinely could not tell it was gluten free. It didn’t crumble when we sliced it into thin layers and frosted each layer.
If you’re looking to impress a crowd with a relatively simple gluten free dessert, make this cake in two round pans, then spread your favorite chocolate buttercream between layers and top the cake with raspberries and a thick layer of dark chocolate ganache. Between the two of us, we had the whole cake gone in two days.
