Ingredients
Sauce
- ½ cup mayonnaise
- ½ cup jarred cherry peppers (sweet or spicy)
- 2 tsp brine from cherry peppers
- Black pepper
Sandwiches
- 1 lb chicken breasts (about 2 large breasts)
- Salt
- Cooking (vegetable or olive) oil
- 1 Red or green bell pepper
- 1 large white or yellow onion
- 6-8 slices gluten-free sandwich bread (you can substitute rice or noodles if you prefer)
- 6-8 slices provolone cheese
- 6-8 slices American cheese
Steps
You can complete these steps in one pan or two, depending if you prefer to eat sooner or use fewer dishes.
- Preheat your oven to 375° F (190° C)
- Finely chop the cherry peppers and mix the sauce ingredients together. Set the sauce aside to spread on the sandwiches later.
- Thinly slice the bell pepper, onion, then chicken breasts, making sure to avoid cross-contamination.
- If using one skillet, heat about a tablespoon of oil over medium-high heat in a 12-inch skillet until it shimmers. If using two skillets, heat about a tablespoon of oil over medium-high heat in a 12-inch skillet and about 2 tablespoons of oil in a 10-12 inch skillet.
- Add the chicken in a thin layer, then season with about a teaspoon of salt and a half teaspoon of pepper. If using two skillets, add the onion and bell pepper together to the second skillet. Cook, stirring to prevent burning, until done (about 3-4 minutes).
- If using one skillet, move the chicken from the pan to a plate and keep warm (by covering with foil or setting the plate in a turned-off microwave). Add about two tablespoons of oil to the skillet, wait for the oil to shimmer again, then add the onion and bell pepper.
- Arrange 6-8 slices of sandwich bread onto a sheet pan, and spread the sauce onto each to taste (noting that extra sauce doesn’t hurt gluten-free bread).
- Add cooked chicken, onion, and peppers to each slice, then top with a slice of provolone and a slice of American cheese.
- Add the sandwiches to the oven and cook until cheese is very melty, about 5-10 minutes. At your preference, you may want to switch the oven to a low broil setting, but leaving it on bake is fine too.
- Using a spatula, transfer the desired number of sandwiches to a plate (if I’m hungry, I can eat about 3) and enjoy!
